Loaded Tofu Scramble

Before cutting eggs out of my diet, I would have scrambled eggs nearly every morning. I was super skeptical to try tofu as a replacement, but I wish I tried it sooner!

INGREDIENTS
One block of organic firm tofu
2 tablespoons nutritional yeast
1 teaspoon salt
1/4 teaspoon turmeric
1/4 teaspoon garlic powder
Spinach
Bell peppers (I love orange)
Yellow onion
Tomatoes
Avocado
DIRECTIONS
Chop all veggies and sauté in a tablespoon of olive oil until veggies are translucent

Crumble tofu into little pieces
Stir in spices (nutritional yeast, turmeric, garlic powder and salt)

Add to pan and sauté with veggies on medium for about five minutes

Top with avocado and enjoy on an english muffin or Siete almond flour tortillas as breakfast tacos!
