Vegan Jackfruit Taquitos

I used to eat shredded chicken taquitos ALL the time as a kid. After giving up meat and dairy, I went years without having them, until I finally decided to make up my own vegan recipe!

INGREDIENTS

  1. Siete almond flour tortillas

  2. Canned jackfruit

  3. Vegan mozzarella of choice (I like the Whole Foods store brand, Violife or Miyoko's)

  4. Salsa of choice

  5. Yellow onion

  6. Cumin

  7. Chili powder

  8. Garlic

  9. Salt

  10. Pepper

  11. Olive oil


Directions

  1. Drain water from jackfruit can

  2. Cut off the hard part of the jackfruit pieces

  3. Dice onion

  4. Mince garlic

  5. In a large saucepan, sauté diced onion in olive oil, salt and pepper

  6. Once onion is translucent, add jackfruit, more salt, cumin, minced garlic and chili powder

  7. Shred jackfruit while cooking, and cook until jackfruit becomes very soft

  8. Top tortillas with jackfruit mixture, salsa and vegan mozzarella

  9. Heat a few tbs of olive oil in a frying pan

  10. Roll tortillas tightly and place face down onto the pan

  11. Cook until cheese is melted and tortillas are slightly browned
